Tradition Meets Tomorrow.
A Modern
Asian Experience.
Refined flavours. Contemporary technique. An experience designed around detail.
02 — Philosophy
More Than Food.
A Journey.
We draw on generations of Japanese technique — the precision of the sushi counter, the slow discipline of the robata grill, the quiet geometry of a perfectly composed plate — and translate them through the lens of contemporary Australian produce.
Every detail is considered. Every ingredient is sourced with intention. The result is neither tradition reproduced nor novelty for its own sake — but a cuisine that is quietly, confidently its own.

03 — Signature Creations
A Study in Detail.
Four dishes that distil the KAIYŌ philosophy — restraint, intensity, and produce treated with respect.

Wagyu Tataki
Seared A5 wagyu, truffle ponzu, micro shiso.

Dragon Roll
King crab, avocado, smoked eel glaze, nori crisp.

Miso Black Cod
Saikyō miso, yuzu, pickled daikon radish.

Chilli Lobster
Half lobster, Szechuan glaze, charred lime.
04 — The Evening
An Evening in Motion.
From arrival to last light — a passage through the senses, paced by the room and the kitchen.

Arrival
A quiet entrance off Eastbourne Street. Warm light, low music, the first sip of something cold.

Cocktails
The bar as overture — smoked gin, yuku citrus, a highball poured slowly. Set the evening's tone.

Open Kitchen
Glancing embers at the robata. The counter frames the choreography of fire, knife, and hand.

The Course
Sashimi cut to the millimetre. Plates arrive with intention and the room settles into a rhythm.

Dessert
Matcha fondant, yuzu tart, black sesame. A measured, luminous finish.

Late Night
The room dims. Whisky, sake, the last conversation. An evening in motion, slowly resolving.
